Ayurvedic Gluten-Free Almond Cookies
- 1 cup chopped or slivered raw almonds
- 1/8 cup pure maple syrup
- 1/8 cup coconut sugar
- 1 Tbsp ghee or coconut oil
- 2 Tbsp. water
- 1/4 tsp cardamom
- 1/4 tsp cinnamon (optional)
- 1/2 tsp rose water (optional)
Kapha: Eat in moderation
Preheat oven to 300 degrees. Grease a cookie sheet with ghee or coconut oil and set it aside. In a medium size bowl, mix all ingredients together. Drop teaspoon size spoonfuls of batter on the cookie sheet. Bake for 15-20 minutes, until the cookies are light-golden brown. Cool the cookies on a wire rack. These are delicious served warm or room temperature and freeze well, too.
In addition to being a sweet compliment to a healthy Ayurvedic meal, these cookies are also vegan and gluten-free.
Really good with a brewed cup of Ayurvedic Roast.
