Ayurvedic Recipe - Gluten Free Bow Tie Pasta with Pumpkin Sauce



  • 1 cup organic canned pumpkin puree (or of its in season, use freshly cooked equivalent)
  • 2 Tbsp. olive oil (for Vata Dosha types) or grass-fed ghee (for Pitta Dosha types)
  • 1 tsp coconut sugar
  • 1/2 tsp of cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 tsp himalayan salt
  • 1/2 cup spring water
  • Organic bow tie pasta noodles (or any shape you like), using box instructions for cooking. We recommend gluten-free pasta, like quinoa or rice.

In a large bowl, mix all of the sauce ingredients together. Pour mixture into a saucepan and simmer on low heat for 5-10 minutes. While the sauce is simmering, cook the bow tie pasta according to the box directions. Serve the pumpkin sauce over the cooked pasta.

For Kapha dosha types, drink some organic ginger tea with this, to help balance the heaviness of the dish.
