Ayurvedic Gluten-Free Almond Cookies

1 tablespoon melted grassfed organic ghee
1 cup chopped or slivered raw almonds
1/8 cup pure maple syrup
1/8 cup coconut sugar
2 Tbsp. water
1/4 tsp cardamom
1/4 tsp cinnamon (optional)
1/2 tsp rose water (optional)
Vata: Pacifies Pitta: Pacifies Kapha: Eat in moderation

1. Preheat oven to 300 degrees.
2. Grease a cookie sheet with grassfed organic ghee and set it aside.
3. In a medium size bowl, mix all ingredients together. Drop teaspoon size spoonfuls of batter on the cookie sheet.
4. Bake for 15-20 minutes, until the cookies are light-golden brown. Cool the cookies on a wire rack.

These are delicious served warm or room temperature and freeze well, too. In addition to being a sweet compliment to a healthy Ayurvedic meal, these cookies are also vegan and gluten-free.
