Ayurvedic Recipe: Sesame Coconut Rice

Good during the warm summer months, due to its cooling nature. Goes great with any vegetable dish.


2 cups organic basmati rice
2 TB Grass-Fed ghee
1/4 cup Grass-Fed ghee or Organic Coconut Oil
4 cups spring water
2 tsp Himalayan salt
1/4 cup sesame seeds (optional, may be too heating for Pitta types)
1/2 cup coconut flakes, dried
handful of cilantro and/or mint leaves, fresh

Doshic Actions:
Balances Vata
Balances Pitta
Kapha take in moderation: add ginger, cinnamon, or cardamom to balance it

Rinse and drain the rice.
Heat 2 tablespoons of the ghee in a saucepan and then add the rice.
Stir until all of the rice is coated with ghee.
Add the water and salt and bring to a full boil, then simmer for around 15 minutes.
Remove the mixture from the heat and leave covered, allowing it to continue to steam.

While rice is sitting covered:
Heat 1/4 cup ghee in a separate saucepan
Add the coconut flakes and sesame seeds, stirring until lightly browned.
Pour this mixture onto the cooked rice and mix well.
Add the cilantro leaves as garnish.

TIP: You can also turn this into a dessert by pouring lower glycemic Yacon Syrup on top!
