Fresh Cilantro Ayurvedic Chutney

  • 1 chili pepper (mild with seeds removed)
  • 1 cup mint, chopped
  • 2 cups cilantro, chopped
  • 1 tsp grated fresh ginger
  • 1/2 tsp cumin seeds
  • 1/2 tsp Pitta Dosha Spice
  • 1 Tbsp. fresh lemon juice
  • Himalayan salt and pepper to taste

Vata: Good for you, but eat in moderation
Pitta: Eat in moderation
Kapha: Good for you

Blend the first 7 ingredients in a blender or food processor, and then add salt and pepper to taste before serving. This tri-dosha balancing chutney pairs beautifully with vegetable and rice dishes.
