2 tablespoons grassfed organic ghee
2 cups dried chickpeas soaked overnight (if you don't have time to soak overnight, you can use organic canned ckickpeas)
2 cloves garlic, minced
1 medium yellow onion
1 1/4 cup canned or fresh chopped tomatoes
1 teaspoon cayenne pepper
1 teaspoon smoked paprika
1 1/2 cups uncooked rice (any variety you prefer)
1 tablespoon olive oil
1 tablespoon salt
1. In a medium pot bring 1 1/2 cups rice, 3 cups water, salt and olive oil to a boil over high heat. Reduce heat and cook on low until all water is absorbed, for another 20 minutes, being careful not to burn the rice.
2. Meanwhile, in a large pan heat ghee over medium heat. Add onion stirring periodically, until onion starts to become translucent, about 5 minutes. Add garlic, cooking for another minute. Add in tomatoes, chickpeas, cayenne pepper, and smoked paprika, and continue cooking for another 20 minutes.
3. Serve on top or to the side of the rice along with a fresh green salad for a quick, healthy and balanced meal.
