Summer Chipotle Cauliflower

Ingredients


3 tablespoons melted grassfed organic ghee
1 large/medium organic cauliflower head, cleaned, washed and drained
1 organic lime
1 tablespoon ground chipotle powder
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon Himalayan pink salt
1/2 cup spinach

Directions

1. Preheat oven to 325F. Line a baking sheet with parchment paper.
2. Combine chipotle powder, onion powder, garlic powder, and Himalayan pink salt.
3. Chop cauliflower into bite-size pieces
4. Drizzle the melted ghee over the cauliflower pieces and gently toss until it is evenly distributed all over the cauliflower pieces are covered.
5. Toss the seasoning mixture onto the cauliflower pieces gently, making sure the seasoning is evenly distributed.
6. Transfer the seasoned cauliflower pieces to the baking sheet for approximately 60-90 minutes, or until the cauliflower is soft on the inside and slightly crispy on the outside, tossing them halfway through. 5 minutes before you take out of oven, add the spinach on top.
7. Remove from oven and squeeze the lime juice over the top of the cauliflower pieces. Optional: Garnish with fresh chopped cilantro.
8. Serve hot and enjoy!
