Ingredients:
4 cups or 950ml homemade or store-bought low-sodium chicken stock
4 packets powdered, unflavored gelatin (1 ounce or 30g)
2 tablespoons or 30ml vegetable oil
3 pounds or 1.25kg whole boneless beef chuck roast, cut into 3 steaks
Kosher salt & freshly ground black pepper
4 medium carrots (10 ounces or 275g), 2 split lengthwise, 2 cut into bite-size pieces
2 small stalks celery (3 ounces or 85g)
1 large yellow onion, thinly sliced (10 ounces or 275g)
2 red bell peppers, thinly sliced (8 ounces or 225g)
4 cloves garlic, thin slices
1/2 cup sweet Hungarian paprika (about 2 ounces or 55g)
1 tablespoon or 15ml soy sauce
1 tablespoon or 15ml Asian fish sauce
2 bay leaves
4 sprigs thyme
2 tablespoons flour (about 3/4 ounce or 20g)
1 pound or 450g Yukon Gold potatoes, peeled and cubed
1 to 2 tablespoons or 15-30ml apple cider vinegar
Chopped, fresh parsley leaves (for serving)
Directions:
Put some gelatin over chicken stock and set it aside for later. Put oven rack to a lower position and preheat the oven to 300°F. In the large Dutch oven, heat oil until it shimmers. Add salt and pepper all over the beef and add it to the Dutch oven. Turn the beef occasionally until both sides are browned. Do this for about 10 minutes. Put the beef on a rimmed baking sheet or large plate.
Add diced carrots to the Dutch oven and cook. Stir well for about 4 minutes until they're browned on all sides. Lower heat when necessary to prevent scorching. Add salt and pepper for taste and then put it on a bowl. Cook split carrot, onion, peppers, celery stalks, and garlic until they are soft and browned. Do this for about 8 minutes.
Add paprika, cook, and stir for about 30 seconds until it's fragrant. Add the chicken stock and gelatin mixture. Add the soy sauce, bay leaves, fish sauce, and thyme.
Slice the seared steaks into 1.5-2-inch chunks. Transfer them to a large bowl and toss with flour. Add beef and all the juices in the plate to the Dutch oven. Stir and simmer over medium heat. Transfer it to the oven, cover with partially open lid, and cook until beef becomes tender. Do this for about 1.5 hours. The liquid should remain at a slow and steady heat throughout. Adjust temperature of oven when necessary while cooking.
Take the stew out of the oven. Pick out and discard carrot, celery, thyme, and bay leaves using tongs. Add potatoes and sauteed carrots to stew. Return it to the oven and continue to cook (partially covered) until beef, potatoes, and carrots become tender and broth has thickened. Do this for 45 minutes to 1 hour. Remove any excess fat from the surface of the stew using a ladle.
Remove the stew from the oven. Place it over a burner and simmer for 15 minutes if necessary. Add 1-2 tablespoons of vinegar for taste. Season with salt and pepper if necessary. Serve it immediately with sprinkled parsley. You can also let it cool overnight or refrigerate and just reheat for serving.
